AIP Breakfast Pork Bites

This AIP breakfast pork takes about 12 minutes to make and is full of herby sweet flavor which makes it perfect for an AIP breakfast. This pairs great with the spinach and sweet potato veggies hash or the sweet potato hash browns. You can make your pork the day of or prep it ahead of time. It has been the perfect Paleo & AIP fast and easy breakfast protein

Ingredients
  

  • 1 Lbs pork loin
  • 1 Tablespoon honey
  • ¾ Teaspoon Garlic
  • ¾ Teaspoon Pepper
  • ½ Teaspoon Salt
  • ½ Teaspoon Rosemary
  • ¼ Teaspoon Sage
  • Teaspoon Cinnamon
  • Oil for cooking

Instructions
 

  • Start by setting a 10 inch skillet on medium heat.
  • Next, take your pound of pork and cut it into bite sized pieces. I really like to use a kitchen scissors for cutting meat because it makes the process easy and keeps surfaces clean.
  • In the heated skillet add a generous glug of oil or bacon grease for extra flavor and spread around the skillet. Add the meat to the skillet and cook for 8-9 minutes.
  • While the pork is cooking, add in the seasonings and herbs to the pork. Stir the meat occasionally to avoid burning and to make sure that the pork is cooking evenly. As the pork cooks you may need to add more oil to avoid sticking.
  • At the 8 minute mark, measure out the honey. The pork should be nearly cooked through at this point. Finally add the honey and cook for another 2-3 minutes or until the pork looks nice and glazed.
  • Take the AIP breakfast pork bites off the heat and serve immediately or store in an airtight container in the refrigerator for up to 6 days. This makes 4 servings.

Notes

What cut of pork should I use?
When I make my pork I usually use pork loin. Pork chops would be a great choice as well. If you don’t have those options, you could also use ground pork and season it the same for an AIP breakfast pork sausage rather than nuggets.
Can I use fresh herbs in this dish?
This dish tastes great with fresh herbs as well. For a substitution of fresh herbs, use about 1 teaspoon of fresh chopped sage and 1 teaspoon of rosemary.
