Easy AIP Breakfast Burritos

This AIP and Paleo Breakfast burrito is packed with bacon, avocado, caramelized onions, and crispy hash browns on a plantain tortilla or grain free tortilla of your choice. They take about 15 minutes to cook and you have everything you need for tasty breakfast burritos. These easy AIP breakfast burritos make the perfect on the go breakfast for those busy mornings.

Ingredients
  

  • 4 AIP Tortillas Recipe in notes
  • ½ Lbs White Sweet Potato
  • 1 Avocado
  • 4 Slices Bacon Nitrate free
  • ½ Yellow Onion
  • Salt Pepper, and Garlic Powder to taste

Instructions
 

  • Start by heating up a large skillet to medium heat and adding the bacon to the skillet. Cook the bacon for about 2 minutes each side or until cooked through.
  • While the bacon is cooking, start heating another skillet and add a generous glug of olive oil. Thinly slice the onion and add it to the skillet. Cook the onion for 8-10 minutes or until nicely caramelized.
  • Wash your sweet potato and grate your potato for the hash browns. When the bacon is finished, add the sweet potatoes to the same skillet with the bacon grease. Season with salt, pepper, and garlic powder. Cook for 3-4 minutes on each side.
  • Start heating another skillet and add a generous glug of olive oil. Thinly slice the onion and add it to the skillet. Cook the onion for 8-10 minutes or until nicely caramelized.
  • When the hash browns are finished, use the same skillet to heat the tortillas. Assemble the breakfast tacos by adding one slice of bacon, ¼ of the avocado, hash browns, and caramelized onions. Enjoy right away or store the ingredients separately in an airtight container in the refrigerator and heat up when ready to use.

Notes on Tortillas
I love these breakfast tacos with my plantain tortillas. I typically make them ahead of time and store them in the freezer until I need them. If you are looking for a store bought option, these cassava flour tortillas by Siete Foods are also a great choice.
Tips on making ahead of time
To make ahead of time, store the ingredients in separate airtight containers in the refrigerator for up to 5 days. You can reheat them in a skillet on the stovetop. That helps the hash browns to crisp up again, or you can microwave them to heat everything up.
