Paleo Breakfast Burrito (an Easy AIP Breakfast)

I was raised on Tex-Mex y’all. We ate at Tex-Mex restaurants almost every Sunday after church. One of the big parts of Tex-Mex is the breakfast burritos. And let me tell you, I love myself a good ol’ breakfast burrito. All the breakfast things wrapped up in a little tortilla, how can you hate portable breakfast? Since eggs are not AIP elimination phase compliant, I had to put together an easy AIP breakfast burrito combination that was egg free but still had all that breakfast burrito goodness. So if you run out of eggs, can’t eat eggs, or are just tired of eggs, then this AIP & paleo breakfast burrito is for you!

This AIP and Paleo Breakfast burrito is packed with bacon, avocado, caramelized onions, and crispy hash browns on a plantain tortilla or grain free tortilla of your choice. They take about 15 minutes to cook and you have everything you need for tasty breakfast burritos. These easy AIP breakfast burritos make the perfect on the go breakfast for those busy mornings. I love making these for breakfast, but I also love them for lunch or dinner.

You can make these burritos the morning of, or make the ingredients ahead of time and heat them up as needed. The Plantain tortillas work perfectly for this recipe, but if you are looking for some already made tortillas, these cassava tortillas by siete foods are delicious!

Tips on Making these Delicious Paleo Breakfast Burritos

What type of tortillas should I use for this easy AIP breakfast?

I love this paleo breakfast burrito with my plantain tortillas. These tortillas use only two ingredients, are easy to make, and are very affordable. I typically make them ahead of time and store them in the freezer until I need them and heat them up in a skillet. If you are looking for a store bought option, these cassava flour tortillas by Siete Foods are also a great choice.

Tips on making hash browns for these paleo breakfast burritos

For quicker assembly, you can shred the potatoes the night before so they are ready to cook in the morning. I just use a grater like this one to shred my potatoes. These hash browns have the best flavor and crunch when you cook them in the bacon grease, so make sure to use the same skillet you cooked the bacon in. For AIP you can also use orange sweet potatoes, but I find that they can burn easily. For Paleo, you can substitute the white sweet potato for a regular potato. With either swap, follow the cooking instructions as directed.

Tips on making this easy AIP breakfast ahead of time

You can definitely make the ingredients ahead of time and assemble the burritos the day you want to eat them. Store the ingredients in separate airtight containers in the refrigerator for up to 5 days. You can reheat them in a skillet on the stovetop. That helps the hash browns to crisp up again, or you can microwave them to heat everything up.

Let's Make Paleo Breakfast Burritos an Easy AIP Breakfast

If you don’t have tortillas handy for these paleo breakfast burritos, start by making these 2 ingredient AIP tortillas

Next, start by heating up a large skillet to medium heat and adding the bacon to the skillet. I think cast iron skillets make some of the best bacon and hash browns. This is the cast iron skillet I used in this recipe. Cook the bacon for about 2 minutes each side or until cooked through.

While the bacon is cooking, start heating another skillet and add a generous glug of olive oil. Thinly slice the onion and add it to the skillet. Cook the onion for 8-10 minutes or until nicely caramelized. Stir occasionally to avoid burning them.

Wash your sweet potato and grate it for the hash browns. This is the type of grater I use to shred my potatoes. When the bacon is finished, add the sweet potatoes to the same skillet with the bacon grease. Season with salt, pepper, and garlic powder. Cook for 3-4 minutes on each side.

When the hash browns are finished, use the same skillet to heat the tortillas. Assemble the paleo breakfast burriots by adding one slice of bacon, ¼ of the avocado, hash browns, and caramelized onions. 

Enjoy right away or store the ingredients separately in an airtight container in the refrigerator and heat up when ready to use.

  • 4 AIP Tortillas Recipe in notes
  • ½ Lbs White Sweet Potato
  • 1 Avocado
  • 4 Slices Bacon Nitrate free
  • ½ Yellow Onion
  • Salt Pepper, and Garlic Powder to taste

Instructions
 

  • Start by heating up a large skillet to medium heat and adding the bacon to the skillet. Cook the bacon for about 2 minutes each side or until cooked through.
