AIP Egg Free Breakfast Bowl (AIP, Paleo, Whole30)

Something you may have noticed about my recipes is that I love to use plantains. Plantains are probably one of my favorite discoveries from starting the AIP diet. They are savory and taste similar to a potato when they are green and are sweet and caramelly as they become more yellow. One of my top favorite AIP Diet breakfasts, hands down, is ripe plantains paired with avocado and breakfast sausage. Plantains take minimal prep time and are hot, slightly sweet, and delicious. They are quick and easy and make a great AIP Egg Free Breakfast bowl!

Cooked ripe plantains, or platanos maduros, are actually a traditional staple of Honduran breakfasts. The longer I have lived in Honduras, the more I like them. This AIP breakfast bowl has a little bit of that Honduran tradition with a little creative AIp twist. Typical platanos maduros are thinly sliced and cooked in oil, for our breakfast plantains in our AIP egg free breakfast bowl, we will cook them in chunks instead of slices.

The great thing about breakfast plantains is you can prepare them from start to finish in 15 minutes or less, and they make a great easy breakfast for people who don’t have a ton of time to cook in the morning. This breakfast bowl is also paleo and whole 30! It makes an easy egg free breakfast for those who are allergic to eggs or are just tired of eggs.

Tips and notes on making an AIP Egg Free Breakfast Bowl

Can I make the plantains ahead?

I am all about meal prep, but I wouldn’t recommend making the plantains ahead of time. They do not have the same texture after they have been stored in the fridge and reheated. With that being said you can save them for later, but they taste the best when they are fresh.

Can I use green plantains?

Yes and no. So what I mean by this is green plantains and yellow plantains have very different properties. A green plantain is more starchy and potato like and it will not taste the same as a yellow plantain. They are more difficult to peel, will take longer to cook, and will not have the same sweet flavor as a yellow plantain. If you can only find green plantains at your grocery store, just leave the plantain on the counter to ripen; and once it turns yellow it is good to use. I typically like to use plantains with just a few black spots, but still mostly yellow.

What is AIP approved breakfast sausage?

Oftentimes store bought sausage includes a lot of ingredients that are not AIP compliant such as sugar, corn syrup, or preservatives. When you buy sausage, look for something naturally sweetened and with natural ingredients. If you can’t find a good option in my recipe for Stuffing I include my favorite way to season ground pork, chicken, or turkey as a breakfast sausage.

Note on making AIP Egg Free Breakfast bowls

To make sure your plantains cook quickly, start heating the skillet before you start cutting the plantains. When cooking plantains you want to use a good amount of oil to make sure that they caramelize evenly. For plantains, I highly recommend using a cast iron skillet. It gets hot quickly and gives the plantains a nice caramelly flavor. This is my favorite affordable made in America cast iron skillet brand!  Make sure to start by making the plantains because they take longer to cook, then make the meat patties.

Steps to making this AIP egg free breakfast bowl

Start by heating a medium sized skillet to medium high heat with about 1 tablespoon of olive oil.

Next, Peel and slice the plantains. Cut the ends off of the plantains and cut the plantains in half. Make an incision longways down the plantain to remove the peel. Then chop the plantain into bite sized pieces.

Add the plantains to the heated skillet, stirring occasionally to avoid burning them. You want them to caramelize and not to burn. Cook on the skillet for about 10 minutes. As the plantains are cooking add more olive oil when they are looking dry. If they do not have enough oil or the skillet is too hot they will blacken and burn but they will not caramelize.

While the plantains are cooking, heat up another skillet and form the breakfast sausage into 3 patties and place on the skillet. Cook them for 3-4 minutes on each side until they are browned.

When the plantains are finished turn off the burner, add in the salt and stir until the salt is combined. Serve the plantains with ½ avocado and a sausage patty to complete your egg free breakfast bowl!

  • 2 Ripe Plantains Yellow with a few black spots
  • ¼ lb AIP Breakfast Sausage
  • 1 ½ Avocados
  • 2-3 Tablespoons Olive Oil
  • ¼ Teaspoon Salt

Instructions
