AIP & Paleo Jam (AIP Berry Compote)
This AIP jam recipe uses a few simple ingredients and can be made in about 12 minutes. All you need is some fruit, lemon juice, honey and arrowroot starch and you got yourself some jam! I also really love this Paleo Jam recipe because it is easily customizable. You can use different fruit to get different flavors. So you can change it to get the fruit flavors you want!

- 1 ½ Cup Frozen mixed berries check notes if using fresh fruit
- 2 Tablespoons Honey
- 2 Teaspoons Lemon juice
- 1 Teaspoon Arrowroot flour
- 1 Tablespoon Water
Start by measuring out your berries and adding them to a 1 quart sauce pan set to medium heat. If using fresh fruit, check the notes.
Let the berries cook for about 4 minutes. At this point the berries should start to thaw and let out their juices.
Add in the honey and lemon juice to the mix and continue cooking for another 4-5 minutes. Stir occasionally to avoid burning and to mash up the fruit.
After 4 minutes the fruit should be very juicy. At this point, in a small bowl mix together the arrowroot flour and water. Dump the arrowroot mixture into the cooking fruit. Cook for another 1-2 minutes. The mixture will thicken as it cooks.
It will be done when it reaches a jam-like consistency. Let cool for a few minutes before serving. You can serve this right away, or you can store it in the refrigerator in an airtight container for up to 10 days.
Pot I used
Frozen fruit cooks down faster than fresh fruit. But you can definitely use fresh fruit in this recipe. When using fresh fruit you will need to add 4-5 extra minutes to the cook time before adding the arrowroot. Since fresh fruit takes longer to release liquid, you will also want to add a little bit of water to cover the bottom of the pot to avoid burning the fruit. So a couple tablespoons up to ¼ cup.
Like I said, customizing the recipe is pretty simple. All you need to do is pick a different frozen fruit and use 1 ½ cups of the frozen fruit. If you are using fruit that is in larger pieces (like strawberries or peaches) you may want to increase the fruit to about 1 ¾ cup. Here is a list of different fruit ideas that work for this recipe.
