If you don’t have AIP sandwich rounds or bread handy, start by making the AIP Sandwich Bread. Link to recipe in notes.
Next, take a skillet and set it to medium heat. Add your bacon to the skillet and cook for 5-6 minutes, flipping halfway through the process.
While the bacon is cooking, take out your lettuce and wash it and set it aside.
When the bacon is finished, remove it from the skillet. Next take the chicken and cut it into two pieces about 4 oz. each. Add the chicken In the same skillet that the bacon was in and season the chicken on both sides. Leave it cooking for about 4-5 minutes then flip to the other side.
If you don’t have any avocado mayo on hand, make some while the chicken is cooking. Link to recipe in notes.
At about 8 minutes, check the chicken by slicing the thickest part. If the juice runs clear it is done, if not let it cook for another 1-2 minutes. When the chicken is nearly done, add the honey to the chicken and let it cook for about another minute.
When the chicken is done, remove it from the skillet and transfer to a cutting board. Assemble the sandwich by starting with the avocado mayo, add your desired amount of lettuce 2-3 pieces, and three slices of bacon.
Finally, take your chicken and slice it longways so that it fits better in your sandwich. Spread the other AIP bread round with avocado mayo and place on top.
Serve immediately or stick in your lunch box for later. You can also save the ingredients separately and they will stay good in an airtight container in the refrigerator for up to 5 days.
