AIP Fruit Pizza (Paleo & AIP Sugar Cookie Dessert)
This AIP Fruit pizza has an AIP sugar cookie base that is made from grain-free flours and sweetened with honey and has a little lemony tang to it. The frosting is dairy free and made from a blend of coconut butter, palm shortening, and maple. This recipe is also fun because you can mix and match the fruit to fit your taste or use whatever fruit you have on hand.

AIP Sugar Cookie Crust
- ⅔ Cup Cassava Flour see notes
- 2 Tablespoons Arrowroot flour
- 2 Tablespoons Coconut flour
- ¼ Teaspoon Salt
- ¼ Teaspoon Baking soda
- 3 Tablespoons Palm shortening
- 2 Tablespoons Coconut oil
- ¼ Cup Honey
- 1 Tablespoon Lemon juice
- 1 Tablespoon Coconut milk
- ½ Teaspoon Lemon zest
- ½ Teaspoon Vanilla extract
AIP Cream Cheese Frosting

Fruit Toppings
- 2 ¼ Cup Fresh fruit chopped
Fruit Pizza Cookie Crust
Start by preheating the oven to 375 degrees Fahrenheit.
In a smaller bowl measure out all the dry ingredients and mix them together until well blended. In a large mixing bowl, mix together the coconut oil and palm shortening until smooth. If the coconut oil is too solid, you may need to warm it up so that it will mix with the shortening.
Measure out the honey and add it to the oil and shortening mixture and mix until well incorporated. Next measure out the coconut milk, lemon, vanilla, and lemon zest and add it to the wet ingredients. Stir until they are all blended together.
Next, add the dry ingredients to the wet ingredients and stir until a dough starts to form. The dough will be a little wet, but don’t worry it is supposed to be that way. Spread the cookie dough onto a piece of parchment paper and press into the desired shape. This dough does not spread very much, so make it as thin or thick as you want the crust to be.
Place the cookie in the oven and bake for 8-9 minutes. Take the AIP Sugar Cookie crust out and let it cool for at least 10 minutes before assembling the cookie.
Frosting, Fruit, & Assembly
While the cookie is baking and cooling, make the AIP Cream Cheese Frosting and cut the fruit for the AIP Fruit Pizza. When the cookie is cooled, top with the frosting and fresh fruit of your choice.
Enjoy your fruit pizza right away, or chill for about an hour before serving. Store the left overs in an airtight container in the refrigerator.

For Fourth of July and Easter: For easter you can form the dough into the shape of an egg and use different fruit to decorate your “easter egg” fruit pizza. For Fourth of July you can make the cookie into a large rectangle and use strawberries and blueberries to make a flag on the cookie. So this AIP Fruit Pizza makes the perfect AIP Easter recipe and AIP Fourth of July recipe!
You can use whatever kind of fruit you like. You can go for a more tropical vibe and use fruit like papaya, mango, pineapple, kiwi, or oranges. Berries also make great toppings like strawberries, blueberries, blackberries or raspberries. Some other fun fruit to add could be cherries, peaches, green grapes, red, grapes, and bananas.
Since it uses fresh fruit, you don’t want to assemble it too far in advance. You can make the cookie base and frosting a day or two in advance and assemble it the day of. This dessert tastes best when it has chilled for about an hour or so.
