AIP Pumpkin Apple Butter Pie

This AIP Pie blends the warm flavors of pumpkin with the sweet flavors of apple butter to make the ultimate pie Thanksgiving dessert that you need for your holidays. This pie has a smooth filling of pumpkin and apple butter. It is naturally sweetened with rich warm coconut sugar and has a blend of pumpkin spice. This pie is AIP, Paleo, and Vegan which makes it dairy-free, egg-free, and grain-free. It is the perfect dessert for a merry anti-inflammatory holiday season.

Ingredients
  

  • 1 AIP pie crust Go to notes for recipe
  • 1 Cup Apple butter Go to notes for recipe
  • 1 ¼ Cup Pumpkin puree Not pumpkin pie filling
  • Cup Coconut sugar
  • 3 Tablespoons Arrowroot flour
  • ½ Teaspoon Cinnamon
  • ¼ Teaspoon Ginger
  • ¼ Teaspoon Cloves
  • ¼ Teaspoon Salt
  • ¾ Cup Full fat coconut milk Canned
  • 1 Teaspoon Vanilla

AIP Pumpkin Apple Butter Pie

  • First, start by making the pie crust. The link to the recipe is in the notes. This will take about 10 minutes. If you want to add crust decorations to your pie, make the pie crust 1.5 times so you have enough dough.
  • Next, preheat the oven to 350 degrees Fahrenheit. In a large bowl mix together the 1 cup of apple butter with the 1¼ cup of pumpkin puree.
  • In a small bowl, mix together the coconut sugar, arrowroot, salt, and spices: cinnamon, ginger, cloves. Add the mixture of spices and sugar into the pumpkin and apple butter mixture. Mix until well incorporated.
  • Finally add in the coconut milk and vanilla to the mixture. Add in one half at a time to mix well into the apple pumpkin mixture.
  • Set the mixture aside and pull out the pie crust. Roll out the pie crust on parchment paper and place into a 9 inch pie plate. Flute the edges of the crust and fill with the pie filling.
  • Place pie in the oven and bake for 50-60 minutes. If you use an 8 inch pie plate, you may need to bake 10 minutes longer. Pie will be done when it is mostly solid, it may jiggle slightly in the middle.
  • Let the pie cool at least 30 minutes before serving. I prefer serving the pie chilled, but you can set it out for 30 minutes before serving to warm it up a bit. Store the pie in the refrigerator covered for up to a week.

AIP Crust Decorations

  • Once you get the pie in the oven, roll out the extra crust and use a cookie cutter, or knife to cut out leaf shapes. Coat them with oil and sprinkle with cinnamon and sugar. Bake in the oven with the pie at 350 Fahrenheit for 15-18 minutes. They will be done when they start to brown. Once they cool, position them on the top of the pie.

The crockpot apple butter cooks for 8-10 hours, if you want to make your apple butter quicker, you can cook it on the stovetop and have it made in 2 hours.
Start with making the pie crust before making the pie, and then stick the crust in the fridge. This allows you to chill the crust while you make the pie so the crust is easier to work with. When rolling out the pie crust, it is easiest when you roll it out on parchment paper and lay it in the pie plate.
