AIP Pumpkin Apple Butter Pie (AIP Thanksgiving Dessert)

delicious aip pie slices, AIP Thanksgiving dessert

The holiday season is pie season. And I am a firm believer that you cannot celebrate the holidays if you did not eat at least one whole pie yourself. One Thanksgiving, after I had spent my first 4 months at college, I was so excited to be back in a normal sized kitchen that I made at least 6 pies and in the course of the Thanksgiving celebration, all 6 of us in the family consumed a whole pie. That was a great holiday. For an AIP Thanksgiving dessert, I love pumpkin pie, but sometimes I feel like pumpkin pie gets a little boring. I like to keep things interesting and this Pumpkin Apple Butter AIP Pie puts a fun twist on a classic favorite.

When rolling out the pie crust, it is easiest when you roll it out on parchment paper and lay it in the pie plate. This pie is perfect for a 9 inch pie. You can also bake it in a 10 inch pie plate as well.

If you want to add crust decorations to your pie, make the AIP Grain-Free Pie Crust Recipe 1.5 times so you have enough dough. Once you get the pie in the oven, roll out the crust and use a cookie cutter, or knife to cut out leaf shapes. Coat them with oil and sprinkle with cinnamon and sugar. Bake in the oven with the pie for 15-18 minutes. They will be done when they start to brown. Once they cool position them on the top of the pie.
