I grew up a Kool-Aid kid. If you don't remember th I grew up a Kool-Aid kid. If you don't remember the Kool-Aid commercial with the Kool-Aid man you're missing out on life (and probably some red 40). 

I still love a good refreshing drink, but something without all the artificial colors and flavors. Meet nature's Kool-Aid, Hibiscus tea. It's easy, shelf stable, and delivers a floral tangy flavor. This is my go to when I want a quick tasty drink! 

Nature's Kool aid:
1 1/2 cups Hibiscus flowers 
1/2-2/3 Cup Honey 

Pour 4 cups boiling water and let steep for 15-20 minutes. Mix the honey into the hot tea. Pour into a gallon pitcher and top off with ice and water (about 12 cups).

Forever chemicals, carcinogens, formaldehyde, heav Forever chemicals, carcinogens, formaldehyde, heavy metals, and micro plastics to name a few. 

I mean, don't you find it a little sus that it takes and estimated 100-500 years for diapers to decompose? 

We're putting these on our babies 24/7 for at least 2 years of their life on some of the most absorbent parts of their bodies, and we're supposed to believe that none of these toxins are seeping into our baby's body? 

Yeah. I don't by it. 

The problem is diaper companies don't have to disclose any of the materials or chemicals they use. Trade secrets, don't ya know?

Diaper companies say their products are safe and well tested. They say just because a chemical is present in a product doesn't mean the body is absorbing it. And besides, there aren't enough studies to prove harm. 

I may not be a scientist, but I do have a brain. And that logic don't logic to me.

A 2025 study showed that Phthalates present in diapers were also present in the urine of the babies and that it was directly related to wearing the diapers.

 They said, "The estimated daily uptake of [these chemicals] through dermal absorption from diapers accounted for 44.9%, 19.5%, 15.1%, and 7.76% of total exposure to these phthalates, respectively."

Furthermore several of these chemicals were positively associated with DNA oxidative damage. 

Yeah, count me out. 

For me, I'm not going to wait for the science to catch up. My children are not your science experiment.

I remember people telling me not to move to Hondur I remember people telling me not to move to Honduras because it was the "murder capital of the world." I know they were just saying that because they cared about me, but I'm so glad I listened to the Lord instead. 

Moving to Honduras was one of the scariest decisions I think I ever made. Moving your whole life, to a new place in a country and culture that is not your own is a scary thing.
 
It's funny to look back and see how much has happened and how much has changed. I've learned so much and grown so much. Living in Honduras has not always been easy, but it has been good.

Stepping out in faith is scary, but I am so glad I follow a God who is faithful.

Red sauce + meat + pasta = spaghetti right? I know Red sauce + meat + pasta = spaghetti right? I know some Italian grandma is probably rolling in her grave, but it makes sense to me...

Homemade Tomato sauce (serves 2)
- 10 oz ground beef 
- 1-2 tomatoes 
- 1 medium carrot
- 1/2 yellow onion 
- 1/2 bell pepper 
- 3-4 cloves garlic 
- 1 ish cup bone broth 
- 1/2 can tomato paste (3 oz)
- Italian seasoning (oregano, basil, crushed red pepper for a little spice)
- salt to taste 

Blend the veggies together with broth. Add to cooked ground beef and simmer on medium low for 10-15 minutes. Add seasonings to taste. 

This sauce is pretty versatile, so use what you have! I don't always have bell peppers, I've even left out the fresh tomatoes and it still turns out great!

Lately when I've had the urge to get a coffee, I've been making them at home. Rn my go to is an iced maple latte with moka pot espresso.
