Cream Cheese Frosting

This AIP Cream Cheese frosting is super simple to make and can be whipped up in just a few minutes. The secret to this deliciously sweet frosting is using powdered maple sugar! This frosting is made using a blend of coconut butter, palm shortening, and maple. To get the tangy flavor of “cream cheese” we add a little lemon. This frosting is perfect for cookies and cakes!

Ingredients

  • 2 Tablespoons Coconut butter see notes
  • 2 Tablespoons Palm shortening see notes
  • 2 Tablespoons Powdered sugar see notes
  • 1 Tablespoon Maple Syrup
  • 1 Teaspoon Lemon juice
  • 1 Teaspoon Milk
  • ½ Teaspoon Vanilla extract
  • Teaspoon Salt

Instructions

  • In a medium sized bowl cream together the coconut butter and palm shortening. You can mix this with a spoon, but for better results, use a mixer. As you stir try to get all the small chunks out.
  • Next, Add in the maple powdered sugar. Stir until smooth. Add in the rest of the ingredients and stir until everything is well incorporated.
  • Note: for a thicker frosting, omit the milk and maple syrup and use 3 Tablespoons of the powdered maple sugar.
  • This recipe yields about ½ cup of frosting. This is enough to frost 8 cupcakes, a batch of sugar cookies, or to frost a one layer 9 inch round cake. Use right away or store in the refrigerator in an airtight container. When you are ready to use it, let it sit and thaw for at least half an hour (do not microwave!).

Notes

Maple sugar
Coconut butter
Palm shortening
For this frosting to achieve that tangy flavor the lemon is imperative! If you do not mind this tasting like normal frosting then you can leave it out of the recipe. Otherwise, you need to make sure to add it!
To make AIP powdered sugar, you will need maple sugar. You can buy a small bag here. Measure your sugar into a blender and blend until smooth. I used a blender cup on my Ninja blender and it worked well.
You can use only coconut butter if that is all you have on hand, but the frosting will not be as creamy. It will also have a stronger coconut flavor since it only uses coconut butter. Using a blend of the coconut butter and palm shortening is what gives it such a nice creamy consistency. Because Palm shortening is so oily, I would not recommend using it on its own. Make sure to use it with coconut butter!
