Easy meals that fit into an AIP, Paleo, or Low Carb diet are hard to find, but this salad combines rich flavor, simplicity, and clean eating all in one. My favorite part? This easy AIP meal requires ZERO cooking.
I fell in love with Mediterranean food on a trip I took to Israel, everything was so good and so fresh. In this recipe, I wanted to capture that same fresh and tangy essence with this Mediterranean inspired meal. This is my go to AIP meal because it is so easy to put together and is super satisfying. Tips for making this easy AIP meal
This easy AIP meal requires no cooking, but you’ll want to make sure to plan ahead to make this process as easy as possible.
- You can pair this salad with spinach as shown in the photo, but this salad also works great as a lettuce wrap, or in a grain free tortilla.
- Make sure you have cooked chicken on hand, this is really a HUGE time saver for this easy AIP meal. Other alternatives are cooked chicken, canned chicken, or you can sub canned tuna.
- To help speed up the process and have sliced olives on hand.
- If you plan on making this the night before, wait to put the salad on the spinach so the spinach doesn’t get soggy. Also, do not add the avocado until the next day so the avocado will stay fresh and not be brown mush. The lemon juice will help the avocado to stay green throughout the day.

Mixing the Easy AIP Mediterranean salad
For this you really just need a mixing bowl and a cutting board for your veggies. In a large mixing bowl combine shredded chicken, olives, chopped onions, and avocados all in the same bowl and mix together. Once they are well mixed, drizzle the salad with the “dressing” a tablespoon of olive oil and a squeeze of lemon.
Honestly though, be careful when you squeeze because you do not want lemon in your eye. Once lemon and olive oil are fully incorporated add salt and pepper to taste, just a few shakes. When you have everything nice and mixed take one cup loosely measured spinach and top with the Mediterranean salad, serve cold.
Easy AIP Cucumber salad
Again, for the cucumber salad all you will need is a cutting board, knife, and mixing bowl. Slice the cucumber as thick or thin as you want, and chop slices into quarters. The goal is for them to be nice bite sized pieces. Add them to a mixing bowl with chopped onions, about 2 tablespoons or as many as you want. Now ot dress up your cucumbers and onions, drizzle them with olive oil and add lemon juice to taste and toss salad– preferably inside the bowl, not out the window. But ya know, to each his own. And there you have it folks, one super delicious, super easy meal!
Mediterranean Salad (AIP, Paleo, Low Carb)
Ingredients
Mediterranean wrap filling:
- ⅓ cup shredded chicken
- ½ avocado
- 1 oz olives a little less than ¼ cup
- 3 tablespoons chopped onions
- 1 tablespoon olive oil
- ¼ lemon, salt, and pepper to taste
- 1 Cup Spinach
Cucumber Salad:
- ½ cup chopped cucumber about a half cucumber
- 2 tablespoons chopped onions
- 1 tablespoon olive oil
- Lemon juice to taste ¼ lemon
Instructions
Mediterranean Salad Filling:
- Measure shredded chicken, olives, chopped onions, and avocados all in the same bowl and mix
- Next drizzle the salad with the tablespoon of olive oil and a squeeze of lemon (careful when you squeeze because that stuff gets everywhere)
- Once lemon and olive oil are fully incorporated add salt and pepper to taste.
- Take one cup loosely measured spinach and top with the mixed salad, serve cold
Cucumber salad
- 1)Slice cucumber and chop slices into quarters (you want them to be bite sized pieces)
- 2)add them to a mixing bowl with chopped onions
- 3)drizzle with olive oil and add lemon juice to taste and toss salad (in the bowl not out the window)
Notes
- To speed up the process and prep time buy cooked chicken or canned chicken and sliced olives
- If you plan on making this the night before do not add the avocado until the next day so it will stay fresh. The lemon juice will help the avocado to stay green.
