As a gluten-free girly for 8 years of my life, thi As a gluten-free girly for 8 years of my life, this is the loaf that got me back on bread. I highly recommend using an ancient grain like Einkorn or Emmer which have a simpler gluten structure and are easier to digest. 

I get my grain from @grandtetonfamily They are a small family farm just trying to grow grain the way God intended it. 

If you want links to the products I use for my bread making, just comment below! I'll DM them to you, but it'll be analog (not automated) so it may take a minute to get them! 

Recipe:

1 lb wheat berries 
1 tsp instant yeast*
2 tablespoons honey 
2 teaspoons salt 

Soak the wheat berries for 8-12 hours by covering them with water about an inch above the grain. Cover with a tea towel and leave on the counter.

To sprout, drain off the excess water and cover with a tea towel. Leave on the counter for 8-12 hours.

For the dough, blend the grain with honey and salt. The dough will be sticky.

In a large bowl mix dough with yeast and let rise for 1-2 hours until it doubles in size. 

Add to bread pans and let rise for another 30 minutes to an hour. 

Bake for 45 minutes to an hour at 350. 

* You can use dry active yeast, you'll just need to proof it in 1/4 cup of warm water with the honey.

I never bought milk. I knew conventional store milk was inflammatory especially for my autoimmune thyroid issues, but my husband loved milk.

I knew raw milk was better, but still on the fence about it. Our pastor and his wife have a small dairy operation, so we decided to start buying milk from them. 

I remember when we first started buying milk, I was surprised at how fast it would sour. Typically by the end of the week It was sour and I would pour it out. 

I thought it was bad. At least, you never drink sour store bought milk. (And it's true, that stuff is rank as all get out.)

What I didn't realize is that raw milk is alive, and that when it sours it's not "bad." 

When I started looking for ways to add more probiotics into our diet I instantly started researching how to culture raw milk.

What I learned was wild. 

I didn't need to do anything. I didn't need any fancy equipment. I didn't need to follow any complicated recipe, or even buy a culture to add to the milk. 

All I needed was raw milk, a jar, and counter space. 

It turns out when you get raw milk from happy, healthy cows it has everything it needs to preserve itself. 

Real food is wild. 

So now I clabber our milk and use it in cooking, smoothies, as a yogurt, or cream cheese. 

So don't be a mom without culture. Go buy raw milk. 

(And if you're wondering about the autoimmune thyroid issue, I've incorporated raw dairy into my diet and it hasn't negatively impacted my labs. Whoot!)

Because I love BBQ sauce, but I don't like eating Because I love BBQ sauce, but I don't like eating corn syrup and a ton of preservatives or spending extra on the "healthy" sauce. 

Currently I've been using this as a dipping sauce or on baked chicken thighs with veggies (it makes such an easy and tasty marinade sauce!). 

Recipe: 
3 oz tomato paste 
2/3 cups water
1/4 cups Frank's hot sauce (can sub vinegar)
1/4 cups coconut sugar (can sub honey)
1/2 tsp smoked paprika 
1/2 tsp black pepper 
1/2 tsp garlic powder 
1-2 tbs vinagre (depending on how tangy you like it)

Mix all ingredients together and enjoy! Store leftover sauce in a jar in the fridge.

I thought I would have to be gluten free for the r I thought I would have to be gluten free for the rest of my life. 

At 20 I was diagnosed with Hashimoto's autoimmune disorder. One of the first things that was recommended was to change my diet and gluten was the first to go.

And truthfully, taking it out of my diet helped my symptoms of extreme fatigue and bloat, which encouraged me in my health journey. But I was also sad. I love a good piece of bread, and I really thought I would never get to make it a normal part of my diet again. 

But, crazy as it sounds, the Bible brought me back to bread. Jesus claiming to be the bread of life and bread also being one of my main triggers just didn't sit well with me. 

After years of being "gluten free" I started looking more into the research, and realized that maybe I had gotten it wrong. 

Maybe it wasn't the gluten, maybe it was what we had done to the wheat: the chemicals, the genetic modification, the processing, the bleaching and added vitamins that was hurting my body. 

I decided to try and make bread as ancestral as possible. I decided to use ancient grain verities, I learned to soak and sprout my grain, and I learned to ferment my dough.

The result? Bread that nourished my body and let's be honest, my soul too. 

And that is a good reason to say hallelujah, amen!

But what if we weren't created to live like that?

What if we were created to need each other? 

What if we were all created to bring something different to the table? 

What if we were created to freely give and receive?

Some recent conversations with friends have had me ruminating on this idea that maybe God made us to need each other, and that's not just ok, but good. 

Life is made richer in community.

"For just as the body is one and has many members, and all the members of the body, though many, are one body, so it is with Christ.  For in one Spirit we were all baptized into one body—Jews or Greeks, slaves or free—and all were made to drink of one Spirit."

1 Corinthians 12:12-13
