Honestly it was a God thing. I had been thinking a Honestly it was a God thing. I had been thinking about trying to make bread from fresh milled ancient grain for a while.

I thought I might be able to tolerate it even with my autoimmune issues. I had been gluten-free for 8 years, but I wasn't about to drop $$$ on a grain mill just to find out if I could eat fresh milled bread.

Forget the mill, I wasn't sure how I'd get my hands on ancient grain in Honduras.

We were at a coffee shop in Honduras and they had one last bag of Emmer wheat. I hadn't noticed it there before, and I haven't seen it since.

I bought it, I had no clue how I was going to make it into bread, but I decided to try.

That's what started me making bread in my blender.

Who knew that you didn't need tons of specialized tools to make bread?

Turns out, you can make bread, muffins, quick bread, porridge and so much more from whole grain wheat berries just using your blender.

I wanted a healthier cereal option that wasn't goi I wanted a healthier cereal option that wasn't going to bomb my family's gut microbiome or spike their blood sugar.

I love using Farmers We Know oats by @onedegreeorganics ! They are organic, glyphosate free, and sprouted. Eating sprouted grains lowers the phytic acid and makes them easier to digest and get all the nutrients. So it really is the best bang for your buck!

So, what is your bing eating spirit animal? Mine is a raccoon 🦝😂

Recipe:
3 cups Oats (organic + sprouted are best!)
3 cups unsweetened shredded coconut
2 cups nuts (I like walnuts and pecans)
2/3 cups Honey
1/2 cup coconut oil
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons vanilla
After baking:
1/2 cup raisins or chocolate chips (optional)

Mix oats, nuts, and coconut together in a large bowl.
In a small sauce pan add the rest of the ingredients and simmer on low for 2-3 minutes.
Mix into the dry ingredients.
Add to two baking trays and bake at 325 for 20-25 minutes stirring half way through.
Let cool and add in raisins or chocolate chips.

Makes about 2 lbs of granola.
