This is one of my weekly go to recipes for meal prep. They are made with a few simple ingredients you probably already have in your pantry. I love these snack cookies because they are super easy to make, naturally sweetened, and packed with nutrients and healthy fats.
This easy AIP snack is delicious and only takes a few minutes to prep and bake. Plus these snack cookies are super filling and are great to have on hand when you need a quick snack or hit sugar cravings.
Tips on making Easy AIP Snack Cookies
For best results, use a very ripe banana. Since banana sizes vary you may need to use a little more or a little less coconut for the cookies to be solid enough to bake.
Use finely shredded coconut in this recipe. If the pieces are too big, the cookie won’t hold together as well. So, the smaller the pieces of coconut are, the better!
For non AIP friends, If you don’t have coconut, no problem! You can sub oatmeal instead. Although note that subbing oatmeal will make the cookies more carb heavy and reduce the healthy fat content.
You can use toasted coconut butter instead of coconut butter, or other nut butters if you have reintroduced them into your diet.
How to make this easy AIP snack
Start by mashing your banana in a mixing bowl with a fork. Mash until smooth. Next add honey, cinnamon, salt and coconut butter. Mix until well incorporated. Finally add the coconut to the banana mixture. You may need to add a little more depending on the size of your banana. Mix until the coconut is well coated by the banana mixture.
Next scoop the batter onto a cookie sheet and form into cookies. These will not spread or change so make sure you are satisfied with the shape before you put it into the oven. This recipe makes about 9 cookies. Put in the oven and bake at 375 for 10-12 minutes. Cookies will be done when they begin to get brown and toasted around the edges.
Once the cookies have cooled, store in an air tight container for up to a week (they will probably last longer, but I eat them before I can find out!😅)
