Allergy Friendly AIP appetizer, Sweet potato slider

This AIP appetizer combines the earthy flavors of rosemary and sage with a sweet, zesty balsamic vinegar punch which makes it a great holiday appetizer, but would be great for any time of the year! This recipe is pretty simple, but tastes amazing. You can have this all whipped up in about 35 minutes. The other thing I love about this recipe is that none of the ingredients are expensive. I often feel like AIP “party-worthy” food can break the bank, but that doesn’t have to be the case! With these AIP sliders, you are sure to bring some allergen friendly life to the party.

Tips on Making This AIP Appetizer

You can use different types of potatoes for this recipe. The most important thing to consider when picking potatoes is the circumference of the potatoes. You want them to be fat enough to make a good size slider, but not too big that the meat patty is too small. I used Japanese sweet potatoes in this recipe because they are starchier than the more popular orange sweet potatoes, and they have a milder sweet flavor that pairs really well with the savory flavor of the seasonings.

I highly recommend using only yellow onions for the onion jam. Purple onions don’t caramelize quite the same and white onions have a sharper, less sweet flavor.

You can also use different types of ground meat. I used ground beef because I wanted a more robust flavor for my sliders, but this would also pair great with ground pork, turkey, or chicken.

Instructions on how to make AIP Sliders

Start by preheating the oven at 425 degrees Fahrenheit.

Use washed sweet potatoes and slice them into quarter inch pieces. Coat the slices in olive oil then place them on the baking sheet. Generously season one side with salt and pepper then place in the oven. Roast for 25 minutes.

While the potatoes are roasting, mix the ground meat. Take one-half pound of ground beef and mix the seasonings into the meat until well incorporated. Form the meat into 16 small patties, about 1 tablespoon per patty. Bake them in the oven at 425 degrees fahrenheit for 15 minutes.

While the potatoes and meat patties are baking, start on the balsamic onion jam. Cover a small skillet or sauce pan with olive oil and turn onto medium-low heat. Next, chop the onion into bite sized pieces and put into the heating pan. Let sauté for about 10 minutes. Stir occasionally so the onions do not burn. You may need to add more olive oil so they caramelize evenly. After the onions reach a nice caramel color add the honey and balsamic vinegar. Cook for another 5 minutes until the balsamic vinegar and honey begin to thicken and create a jam-like texture.

When the sweet potatoes and meat are done baking, take them out of the oven and let cool for a few minutes. Assemble each slider and top with the balsamic onion jam, and there you have it! Delicious holiday cheer in a bite. If you want to be extra fancy you can garnish your sliders with fresh rosemary. It gives it an extra visual appeal to the appetizing flavor.
