Ok, can I be honest with you guys? I’ve never been a big fan of sandwiches. I didn’t exactly dislike them, but they weren’t the food that got me excited when I saw it packed for lunch. But as I have refined my tastes, I have found that there are endless combinations of delicious sandwiches that go beyond the basics of a boring pb&j. I am a sandwich convert. They can be so fun and customizable! One of the biggest hurdles to making sandwiches on the AIP diet is the difficulty of finding a quick and easy AIP sandwich bread recipe. But I am here to let you know I have found an AIP bread recipe that is quick, easy, and delicious.

Paleo Bread

Bread takes time to make and uses lots of AIP flour which is expensive. So for a long time I didn’t even bother trying to make bread for sandwiches, I didn’t need them. But it turns out I missed sandwiches, so I decided I had to find a way to bring sandwiches back into my life but keep it simple. That is where this AIP sandwich bread recipe comes in. It is made mostly from ripe plantains, which cuts down on the cost of ingredients, and can be ready from start to finish in less than 20 minutes. It is soft, slightly sweet, and holds together like a dream. Let me tell you, this is a miracle AIP bread recipe! It is AIP, Paleo, and Vegan, and is great for sandwiches or toast.

Tips on making this AIP Sandwich Bread Recipe

Can I use bananas instead of plantains in this AIP Bread Recipe?

No. Don’t even try. Bananas are sweeter than plantains and have a less bready texture. If you use bananas you will have weirdly sweet banana flavored bread. Don’t do it. Go buy yourself some plantains from your local grocery store and call it a day. 

Can I use Green Plantains in this Recipe?

You can use green plantains, but green plantains will change the flavor and texture of the bread. I have never made this AIP bread recipe with green plantains so I honestly don’t know how much the recipe will change. If you can only find green plantains, leave them on your counter to ripen. But if you are impatient, like me, you can use them to make the recipe. You will need to add a couple tablespoons of liquid, either water or oil, when you blend them so the mixture will be smooth.

Can I freeze this AIP Sandwich bread for later?

You can definitely freeze your bread for later. Make sure to put it in an airtight container to store in the freezer. You can put it in the fridge the night before you want to use it or leave it on the counter to thaw for a couple of hours. Sometimes I like to make a big batch of AIP Sandwich Bread and stick them in the freezer for easy meals.

Note on baking with plantains

Because a plantain can vary in size and ripeness, the texture of your bread may be slightly different each time you make this recipe. If your dough seems too dry and  the flour is not mixing into the blended plantains add in a couple tablespoons of water until the mixture is a thick batter. On the other hand, if the mixture is too thin, add in a couple tablespoons of cassava flour until the mixture thickens.

How to make this AIP Bread Recipe

Start by preheating the oven to 400 degrees. Next peel the plantains. Cut them in half and then cut the ends off of them. Make an incision along the side and remove the peels.

Place the plantains into a blender and blend on high until the mixture comes out smooth. If the plantains are not ripe enough, you may need to add 1-2 tablespoons of water to get them blended.

In a small bowl, mix the coconut flour, cassava flour, baking soda, and salt together until well incorporated. Put the plantain mixture in a large mixing bowl and then add in half the flour mixture and stir until combined. Add the second half of the mixture and stir again until well combined. 

When the oven is ready add in the apple cider vinegar to the dough. The dough will be a thick batter and will be too sticky to mold with your hands.

Seperate the dough into 4 pieces. For each quarter, split that into 2 balls, you will have 8 pieces total. Scoop the batter onto a cookie sheet and flatten with a spatula. Spread to the size and thickness that you want as they do not spread or rise much during the baking process. 

Sprinkle with pepper and bake in the oven for 10- 12 minutes, or until the edges of the bread begin to turn golden brown. Serve your AIP Sandwich bread right away, or store in the refrigerator or freezer for later.
