The best part about waking up is breakfast. This is hands down a universal truth, and if you disagree, I am here to inform you that you are wrong. But, let’s not start this recipe out on the wrong foot. I like a lot of food (hence the reason I blog about food), but breakfast sandwiches have to be up there as one of my favorite meals, for really any time of the day. And since I just came up with a quick and easy sandwich bread recipe, AIP diet breakfast sandwiches have been one of my favorite go to meals for an easy AIP breakfast.

When it comes to any meal, especially breakfast, you want to make sure that you fuel yourself properly. A good well rounded meal includes protein, fats, and carbs. This easy AIP breakfast sandwich has got you covered. It has a balance of all three with the combination of sausage, avocado, sauteed onions and kale, on a delicious AIP sandwich round. 

I know making breakfast in the morning can be stressful because you don’t have hours to spend in the kitchen. The great thing about this sandwich is that it is quick to make, and all the ingredients can be cooked beforehand so you can assemble your sandwich the day of. I’m telling you, this is your new AIP diet breakfast friend.

Tips and notes on making AIP Diet Breakfast Sandwiches

What is AIP Approved Sausage?

Oftentimes store bought sausage includes a lot of ingredients that are not AIP compliant such as sugar, corn syrup, or preservatives. When you buy sausage, look for something naturally sweetened and with natural ingredients. If you can’t find a good option in my recipe for Stuffing I include my favorite way to season ground pork, chicken, or turkey as a breakfast sausage.

Can I make the bread ahead?

You can definitely make the bread ahead of time! I have done this recipe both ways: making the bread ahead or making it the when I need it. The Easy AIP Sandwich Bread doesn’t take a lot of time to make, and adds about 8 minutes of prep time to the recipe. I know mornings can be crunch time, so if you are looking for a way to keep this meal quick, then make the bread ahead of time. You can store the bread in the refrigerator or freezer until you are ready to use it. 

Mixing things up and ideas for non AIP eaters

Breakfast sandwiches are fun because the options are endless. You can use different types of meat: ground pork, ground turkey, ground chicken, or even bacon. You can add different greens like sauteed brussel sprouts or spinach. I know a lot of us have houses full of family or friends who do not have food sensitivities, these sandwiches are great because they are easy to change up for people who do not eat AIP. You can use different bread or add an egg or some cheese for those without food sensitivities. It’s really easy to mix and match to fit anyone’s preferences.

How to make AIP Diet Breakfast Sandwiches

If you don’t have any bread for your sandwiches go ahead and start by making some AIP Sandwich bread. It takes about 8 minutes of prep time for the bread. When you have it in the oven you can start on the rest of the steps. 

First start by turning on your skillet to medium high heat with about 1 tablespoon olive oil. While the skillet is heating, slice the onions. Add the onions to the skillet to sautee, stirring occasionally so they get caramelly all over.  Next turn on another skillet to medium high heat and add a little bit of oil to prevent the sausage from sticking. Section your sausage into 4 balls and form them into sausage patties. Cook each patty for 3-4 minutes on each side.

If you are using fresh kale, wash and chop the kale and loosely measure about 2 cups of kale. After the onions have cooked for 10 minutes add in the kale and cook for another 3-4 minutes until the kale has reduced in size. Add salt and pepper to taste. If you want to eat the sandwiches now, go ahead and assemble them. If you want to save them for later put the ingredients in the refrigerator and store for up to a week.

Assemble the AIP diet breakfast sandwiches by mashing half an avocado on a sandwich round and sprinkle with salt and pepper. Next add a sausage patty and top with a quarter of  the sauted onions and kale. This will make 4 breakfast sandwiches.

Ingredients
  

  • ½ lb AIP Breakfast Sausage
  • 2 Avocados
  • 1 Medium Yellow Onion
  • 2 Cups Chopped Kale Loosely Packed
  • 1 Recipe AIP Sandwich Rounds Link in notes
  • Salt and pepper to taste

Instructions
 

  • If you don’t have AIP sandwich rounds on hand, start by making those. It takes about 8 minutes of prep time.
