Why a Chocolate AIP Pancake Recipe?

So I grew up loving chocolate chip pancakes and just chocolate with pancakes in general. And to tell you the truth, I still do throw chocolate chips in my AIP pancake recipe every once in a while (I know, the rebel is strong with this one), but I wanted a healthier option that honored my body’s food sensitivities. So I thought, “Well heck, why not just make the whole pancake chocolate!?” That my friend, is when I struck gold. And trust me, they are very believably chocolate.

If you don’t believe they taste like chocolate, the  let me tell you a a story. I made my AIP Chocolate Pancake Recipe one Saturday morning as a test run. Micah, my husband, ate a whole plate before I told him they didn’t have “real” chocolate in them. He was in total disbelief. I would say that is my stamp of approval. So what are we waiting for? Lets get cooking!

Tips and tricks on making this Chocolate AIP Pancake Recipe

Can I use a green plantain?

As I always advise DO NOT USE THE GREEN PLANTAINS as a substitution for a ripe plantain. You want to use a plantain that is in the yellow to black spectrum. Just like bananas, the riper the plantain is, the sweeter it will be. So please make sure not to use green plantains.

Can I use bananas?

This is always a tricky answer. Plantains teend to have a breadier consistency than bananas have in baked goods. This would be my advice. If you have no plantains, you can use a banana. But I would use at least one whole banana, and maybe even add 1-2 more tablespoons of flour to the mix. I’ve never used bananas, so I give no promises 

Can I use cocoa powder?

If you don’t have carob powder, you can definitely use cocoa powder in place of the carob (but just remember cocoa powder is not elimination phase compliant). It’s an easy 1-to-1 swap in the recipe. The main difference between cocoa and carob is that carob is naturally sweet. So if you use cocoa powder, you may want to add 1 tablespoon of honey or maple to your batter.

How to make these Fluffy AIP Pancakes:

Start by blending the plantain until smooth. I highly recommend using a blender or food processor for this portion and not a fork. Plantains are a lot firmer than a banana so a blender works much better. 

In a separate smaller bowl, mix the cassava flour, coconut flour, tapioca flour, carob powder, baking soda and salt until well combined. Once the dry ingredients are completely mixed, slowly add the coconut milk and coconut oil to the mixture.

Once the mixture is well incorporated, add in the blended plantain and apple cider vinegar and stir well.

Heat a skillet on medium high heat. Grease skillet with AIP approved oil and cook the pancakes for 3-5 minutes on each side.
