Easy AIP Frosting (AIP, Paleo, Vegan Friendly)

Having a good frosting go-to recipe is just the name of the baking game. For a long time I didn’t make AIP frosting. It was an enigma to me. What could you substitute for butter and powdered sugar? But, where there’s a will, there’s a way. So after I made AIP sugar cookies, I knew that they would not be the same without AIP frosting.

Just to let you know, this AIP Frosting goes great with the AIP Sugar Cookie recipe

Tips on making AIP Frosting

When it comes to AIP frosting, it is easiest to work with room temperature products. But if you live in a colder climate you may need to soften your coconut butter in the microwave so it will easily mix with the rest of your ingredients

Can I use only coconut butter?

I would lean towards no on only using coconut butter for this frosting recipe. Coconut butter has a very distinct coconut flavor and little bit of a gritty texture. The frosting will not come out as light and easy to spread if you only use coconut butter.

Can I use only palm shortening?

On the flipside palm shortening is very oily and has more of a butter like texture. You may be able to only use palm shortening to make the frosting, but you may need to stabilize it with more arrowroot flour or some coconut sugar in place of some of the maple to even out the texture. I have never made this only using palm shortening, so I’m not sure if it would be too oily.

How to make AIP Frosting

Start with room temperature ingredients. If the coconut butter or palm shortening is too solid to mix, try softening them in the microwave, but do not melt them!

Mix the coconut butter and palm shortening until creamy smooth. Next add the maple syrup, coconut milk, and vanilla. Mix until well incorporated.

Finally add the arrowroot flour and salt and mix again.

For Green frosting

Add the matcha ¼ of a teaspoon at a time until you reach the shade of green you want. If your matcha is clumpy, you may want to push it through a mesh strainer to get all the clumps out so the matcha mixes evenly into the frosting. Also to note, the matcha will give the frosting a mild green tea flavor.

You can use the frosting right away. If it seems a little too soft to use, you can stick it in the refrigerator or freezer for about 10 minutes to help solidify it.

For storage, place in an airtight container and store for up to a week in the refrigerator. The frosting will become solid in the cold. When you are ready to use it, let it thaw on the counter until it reaches a softer consistency.
