Easy Paleo & AIP Waffle Recipe (AIP Breakfast)

There seems to be a great debate throughout humanity about which is better, pancakes or waffles, but to tell you the truth I think I am team waffle (don’t hate me). Nothing beats a hot waffle with its crispy edges and every little waffle compartment filled with sweet maple syrup. It is a dream come true. Waffles have become my weekend go-to recipe because they are so delicious and easy to make. They are a fun way to spruce up the normal breakfast routine. This AIP Waffle recipe is everything a waffle should be without the inflammatory grains. Trust me, these AIP & paleo waffles are about to rock your world!

These AIP Waffles have the classic crispy outside and nice bready inside. I love these waffles because they use fairly inexpensive ingredients and make super delicious waffles. The batter just takes a few minutes to make and they cook fast in the waffle maker! They taste amazing topped with maple syrup or with AIP Mixed Berry Compote. Honestly, what is not to love? They make a fun breakfast, delicious brunch, or a great breakfast for dinner kind of vibe. And they go great with Sweet Potato Spinach Hash or the Butternut Squash Bake. Tips and Tricks for Making this AIP Waffle Recipe an AIP Breakfast

Can I substitute tapioca flour in this AIP Waffle Recipe?

In this recipe you can easily substitute the arrowroot flour for tapioca flour. They are both starchy flours and will give that nice crispy outside to the waffles. This is my favorite arrowroot flour and this is my favorite tapioca flour. I like to buy in bulk because it saves some dollars, and so I can always have them on hand for AIP baking! Aside from this substitution, I wouldn’t recommend substituting any other flour in the recipe.

What works best to cook this AIP breakfast?

This recipe really only works in a waffle iron, so you will need one for this recipe. If you have temperature control of your waffle iron you will want to set it to 350 degrees Fahrenheit. Most waffle makers are automatically set to that temperature. If you have a tiny kitchen like me these Dash waffle makers are a great option! They are super compact and don’t take up a ton of space in the kitchen. It is probably one of the best purchases I’ve made in the past year.

You can pair your waffles with a ton of different toppings or sides. One of my favorite things about waffles is how customizable they are. Here are some ideas for AIP waffle toppings

Let's Make these AIP & Paleo Waffles!

Start by getting out your waffle maker and plugging it in to preheat. If you can control the heat, then set it to 350 degrees Fahrenheit. In a medium sized mixing bowl add the dry ingredients together and mix until well incorporated. 

Next, measure out the oil, avocado or coconut oil works great, and add that to the flour mixture. Stir until a dough starts to form. Next add in the honey and stir until well incorporated.

Measure out the coconut milk and add half of it to the mixture. Mix until there are no clumps. Then, add the remaining coconut milk into the batter and stir until everything is well blended together.  This batter will be thicker than normal waffle batter.

When your waffle maker indicates that it is ready to use, poor the batter into the waffle maker and spread it slightly across the iron. Cook each waffle for 4-5 minutes. 

They will be ready when they have turned a golden brown. When they come out of the waffle iron they will be a little soft but will get crispy as they cool. 

This makes five to six 4 inch waffles or two to three 8 inch waffles. Serve immediately or store in an airtight container in the refrigerator for up to 6 days.
