Homemade strawberry Lime Popsicles (AIP & Paleo Popsicle)

It’s getting hot in here (so hot), so eat a popsicle and stay decent folks. The summer months are coming in hot and when it is a million and five degrees outside I want to sleep in the freezer and not come out until September. But since that isn’t a realistic option, the next best thing is to make popsicles! Popsicles are the quintessential mark of summer and there is nothing more refreshing than enjoying a delicious homemade strawberry popsicle on a hot summer day. These AIP & Paleo popsicles are so simple to make you will want to make them all the time! The combination of sweet strawberry and zingy lime in these strawberry lime popsicles truly hits the spot!

These paleo popsicles are made with 4 simple ingredients: water, honey, lime, and, you guessed it, strawberries. That’s it! You can whip up these strawberry lime popsicles in just a few minutes and then leave them to freeze. I love making homemade strawberry popsicles because a lot of store bought popsicles are loaded with sugars and dyes or sweetened with a bunch of extra fruit juice and these are made with simple whole food ingredients that are nourishing to your body. Tips and tricks on making these AIP & Paleo Popsicles

Do I need a popsicle mold to make these Strawberry Lime Popsicles?

Popsicle molds can be super helpful for making this recipe and if you plan on making your own popsicles during the summer, then popsicle molds are a great kitchen tool to have around. You can get them off amazon pretty inexpensively. This 6 piece set is similar to what I have. This 10 mold set is also a great option if you are looking for one that has more popsicles. If you don’t have popsicle molds you can always use small plastic cups with popsicle sticks!

Can I use fresh strawberries to make these homemade strawberry popsicles?

You can definitely use fresh strawberries in this strawberry lime popsicle recipe! Either fresh or frozen strawberries works great. I prefer the frozen strawberries because the popsicles will freeze faster if they are made with frozen strawberries.

Can I use already squeezed lime juice in these AIP popsicles?

You can also use already squeezed lime juice for this AIP & Paleo popsicle recipe. I prefer to use fresh because there are no added preservatives, but again if that is what you have available, it will work just fine.

Ingredients for Paleo popsicles

Let’s make some Paleo Strawberry Lime Popsicles!

Start by taking the limes and juicing them using a citrus juicer (or hands if you don’t have one). Make sure the seeds don’t get into the juice, but the pulp is fine. 

In a large bowl mix the honey with ½ cup of water until it is well incorporated and set aside.

Next, add the strawberries, lime juice, and ¼ cup of water to the blender. Blend the mixture until smooth. If the strawberry mixture wont blend, add a few tablespoons of the honey water to the blender. Add the strawberry puree into the honey and mix until well incorporated.

Add the strawberry lime popsicle mixture into the popsicle molds and freeze for 4-8 hours.

This paleo popsicle recipe makes anywhere between 5-8 popsicles depending on the size of the molds. These store in the refrigerator for up to a month.

Ingredients
  

  • 1 ½ Cup whole strawberries frozen or fresh
  • ¾ Cup water
  • ¼ Cup Honey
  • ¼ Cup Lime juice 2-3 limes

Instructions
 

  • Start by taking the Limes and juicing them and set aside.
  • In a large bowl add ½ cup of water and the honey and mix them together in a bowl.
  • Next take the strawberries and add them to a blender or food processor with the lime juice and about ¼ cup of water.
  • Puree the lime and strawberries in a blender or food processor until smooth. If the strawberries are not blending, add more water.
  • Add the strawberry lime puree to the honey and water mix. Stir everything together until well incorporated.
  • Add the mixture to popsicle molds and freeze for 4-8 hours. It may take more or less time depending on the size of your popsicles and if you use fresh or frozen strawberries.
