One night, I went over to dinner at their house, and they brought out a suspicious looking brown things wrapped in bacon. I was skeptical of eating it, but when I bit into it, my mind was blown. The salty crispy bacon pairs great with the warm brown sugar of the dates. I was hooked, and this easy bacon wrapped dates appetizer was the culprit.

Tips on making easy AIP and Paleo Bacon Wrapped Dates
What kind of bacon should I use?
I tend to like thinner bacon for wrapping dates because I think it makes the process easier. But really you can use just about any type of bacon you would like. Flavorwise I think types of bacon that have a sweeter undertone work better for this recipe, like apple wood smoked, or maple bacon.
What type of dates should I use?
I prefer the Medjool dates hands down in this recipe. Medjool dates in general are thicker and sweeter than California dates which are the other popular brand of dates. If you use Medjool dates, cut them in half. If you are using California dates, because they are smaller you can leave them whole.
Making this bacon date appetizer
Start by taking the bacon and cutting the pieces in half. You can use a knife or a kitchen scissors for this, but to make this fast, cut it all at once instead of taking all the pieces apart.
Count how many pieces of bacon you have now, and that is how many dates you need if you are using California dates or half that amount if you are using Medjool dates.
If needed, remove the pits from the dates. For Medjool dates, cut them in half before wrapping them in the bacon. Take a slice of bacon and wrap it around the date. Try to wrap the bacon tightly around the date so it does not come undone in the oven.
Place dates in a large baking or cookie sheet with a lip. The bacon creates a lot of bacon grease so you want to bake them in something that will not spill into the bottom of the oven.
Place the dates with the loose end of bacon facing down and space them out on the cookie sheet. Put in the oven at 375 and bake for 12-15 minutes or until golden brown.
