Next, preheat the oven to 375 degrees. In a large bowl mix together the 1 cup of apple butter with the 1 ¼ cup of pumpkin puree.
In a small bowl, mix together the coconut sugar, starch, salt, and spices: cinnamon, ginger, cloves. Add the mixture of spices and sugar into the pumpkin and apple butter mixture. Mix until well incorporated.
Finally add in the coconut milk and vanilla to the mixture. Add in one half at a time to mix well into the apple pumpkin mixture.
Set the mixture aside and pull out the pie crust. Roll out the pie crust on parchment paper and place into a 9 inch pie plate. Flute the edges of the crust and fill with the pie filling.
Place pie in the oven and bake for 50-60 minutes. If you use an 8 inch pie plate, you may need to bake 10 minutes longer. Pie will be done when it is mostly solid, it may jiggle slightly in the middle.
Let the pie cool at least 30 minutes before serving. I prefer serving the pie chilled, but you can set it out for 30 minutes before serving to warm it up a bit. Store the pie in the refrigerator covered for up to a week.
