Being dairy-free, I wanted to create a dip that had a fun creamy texture, but without all the dairy. This garlic herb dip beautifully combines garlic and herbs with a creamy tangy twist. Think ranch dip turned Italian. The basil, oregano, and thyme bring a fun full flavor to the dip. This creamy garlic herb dip is so good and is great for everyday snacking, but also makes a great AIP party food or appetizer when you pair it with fresh veggies or Easy AIP Crackers.

Tips and Tricks on Making this AIP Party Food

How do I get coconut cream for this AIP dip?

So a really important factor of this creamy garlic herb dip is to use coconut cream and not the milk! Coconut cream is typically sold in a can, and has a thick creamy consistency. It is typically thicker than cream from cow’s milk. For this recipe you can either buy a can of coconut milk and skim the cream off the top, or buy a can of coconut cream and get the cream off the top. One important factor in this is you do not want to mix or shake the can. For the dip to be creamy you want just the cream and not the excess water. This process is easiest to do if you refrigerate the coconut cream before using it. It will make the cream more solid and easier to scoop off the top.

Should I use fresh or dried herbs?

This AIP party food recipe is great with fresh or dried herbs. I made this recipe using dry herbs so if you use fresh herbs you will need to adjust your measurements. Typically a 1 to 3 ratio is suggested for dried herbs to fresh herbs. So for 1 teaspoon of dried herbs use 3 teaspoons of fresh herbs in this AIP dip.

Do I need to roast the garlic for this AIP party food?

You do want to make sure your garlic is cooked for this dip. For roasting the garlic, it’s great if you can throw the garlic in the oven while other things are cooking. Another option is cooking your garlic in the microwave. Cut the top off the garlic as shown in the photo and drizzle a little bit of olive oil into the cloves. Next place the garlic in a microwave safe bowl and fill the bottom with water, covering about ⅓ of the clove with water. Cook for 5-8 minutes or until the garlic is cooked through.

Let's make some Creamy Garlic Herb AIP Dip!

 Start first by prepping the garlic to roast. Set the oven to 450F. Next, cut the top off of the garlic and place in foil. Drizzle the top of the garlic with olive and cover with the foil. 

Place in the oven, even if the oven isn’t at 450F yet, and cook for 15-18 minutes or until the garlic is soft. (you can also microwave the garlic if you don’t want to roast it in the oven. Check the note above for instructions)

While the garlic is roasting add the lemon juice, olive oil, and herbs to a blender cup and set aside. Next take the coconut cream and measure out ¼ cup of the cream and set aside. 

When the garlic is finished, add it to the blender cup with the herbs and seasonings, lemon juice, and oil. You should be able to easily squeeze the garlic out of the skin. Blend the garlic and herbs until it is smooth. 

In a bowl add the garlic mixture and the coconut cream and stir together. Serve with an extra drizzle of olive oil on top and with fresh veggies or some Easy AIP Crackers. You can serve the dip right away or store it in the refrigerator in an airtight container for later. 

I do find that letting it sit for a few hours before serving helps the herbs and garlic to incorporate better with the coconut cream. This lasts for about 5 days in the fridge. The dip may thicken as it sits in the refrigerator. Feel free to add a little coconut milk to get the dip to the consistency you like before serving.

Ingredients
  

  • 1 Head of Garlic about 10 cloves
  • 1 Tablespoon Lemon juice
  • 2 Tablespoons Olive oil
  • 1 Teaspoon Thyme dried
  • 1 Teaspoon Oregano dried
  • 1 Teaspoon Basil dried
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • ¼ Cup Coconut cream chilled

Instructions
