Simple AIP Fruit Pizza (Paleo & AIP Sugar Cookie)

My husband makes fun of me because he says I have this soul connection with food. And I think he’s right. It’s just that for me, food comes with so many memories. And this recipe for AIP Fruit Pizza is no exception. I don’t remember the first time I ever had fruit pizza, but I remember being a kid and helping my mom place fruit on a sugar cookie that was about the same size as me. I remember being confused that we called it a “pizza” but not overthinking it too much because goodness gracious, the combination of fruit, cream cheese frosting, and sugar cookie sure tasted delicious. This AIP Fruit pizza blends those flavors perfectly with an AIP sugar cookie base, fresh fruit, and an AIP “cream cheese” frosting. It is a great AIP spring time recipe and is one of my favorite AIP Easter Recipes and AIP Fourth of July Recipes!

What Makes This AIP Fruit Pizza SO Delicious?

This recipe is perfect for the warmer weather! As the world turns to springtime I find myself reaching for fresh fruit, and a fruit pizza is a perfect way to get a variety of different fruit on a delicious dessert. This AIP Fruit Pizza has an AIP sugar cookie base that is made from grain-free flours. It’s a spin off of my AIP Sugar Cookie Recipe. This AIP Fruit Pizza also has a little lemony tang, and is sweetened with honey. The frosting is dairy free and made from a blend of coconut butter, palm shortening, and maple. This recipe is also fun because you can mix and match the fruit to fit your taste or whatever fruit you have on hand. This is the perfect AIP and Paleo dessert and makes a fun party food!

How can I make this AIP Fruit Pizza Easter themed or Fourth of July themed?

This AIP sugar cookie recipe is also fun for Easter and the Fourth of July because you can decorate it for the holidays. For Easter you can form the dough into the shape of an egg and use different fruit to decorate your “easter egg” fruit pizza. For Fourth of July you can make the cookie into a large rectangle and use strawberries and blueberries to make a flag on the cookie. So this AIP Fruit Pizza makes the perfect AIP Easter recipe and AIP Fourth of July recipe! 

What kind of fruit should I use on my AIP sugar cookie dessert?

Picking the fruit is the best part, and you can mix and match for this recipe! You can go for a more tropical vibe and use fruit like papaya, mango, pineapple, kiwi, or oranges. Berries also make great topping like strawberries, blueberries, blackberries or raspberries. Some other fun fruit to add could be cherries, peaches, green grapes, red grapes, and bananas. Pick the fruits you love for this AIP sugar cookie dessert and make a fun combination! 

What flour works best in this AIP sugar cookie recipe?

Using good quality cassava flour is super important for this AIP sugar cookie recipe! Lower quality cassava flour can have a strong taste or a gummy texture when baked. Some of the best cassava flour I have used is Otto’s Cassava flour. The texture is perfect and it doesn’t have any strong flavors or smell. So I would highly recommend it! 

Can I make this AIP Fruit Pizza ahead of time?

Since it uses fresh fruit, you don’t want to assemble it too far in advance or the fruit may brown or discolor. You can make the cookie base and frosting a day or two in advance and assemble it the day you want to serve it. This dessert tastes best when it has chilled for about an hour or so.

Ingredients set out for making the crust for the AIP fruit Pizza

Let's Make this AIP Fruit Pizza, a Paleo & AIP Sugar Cookie Dessert!

Start by preheating the oven to 375 degrees Fahrenheit. 

In a smaller bowl measure out all the dry ingredients and mix them together until well blended. In a large mixing bowl, mix together the coconut oil and palm shortening until smooth. If the coconut oil is too solid, you may need to warm it up to soften it.

Measure out the honey and add it to the oil and shortening mixture and mix until well incorporated. Next measure out the coconut milk, lemon, vanilla, and lemon zest and add it to the wet ingredients. Stir until they are all blended together.

Next, add the dry ingredients to the wet ingredients and stir until a dough starts to form. It takes a minute or so for the dough to start to set up. The dough will be a little wet, but don’t worry it should be a little sticky.

Spread the cookie dough onto a piece of parchment paper and press into the desired shape. This dough does not spread, so make it as thin or thick as you want the crust to be. I spread mine out to an 11 by 8 rectangle. Place the cookie dough in the oven and bake for 8-9 minutes. Take the AIP Sugar Cookie crust out of the oven and let it cool for at least 10 minutes before assembling the AIP Fruit Pizza.

While the cookie is baking, make the AIP Cream Cheese Frosting and cut the fruit for the AIP Fruit Pizza. When the cookie is cooled, top with the frosting and fresh fruit of your choice. Enjoy your fruit pizza right away, or chill for about an hour before serving. Store the left overs in an airtight container in the refrigerator.

AIP Sugar Cookie Crust

  • Cup Cassava Flour see notes
  • 2 Tablespoons Arrowroot flour
  • 2 Tablespoons Coconut flour
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Baking soda
  • 3 Tablespoons Palm shortening
  • 2 Tablespoons Coconut oil
  • ¼ Cup Honey
  • 1 Tablespoon Lemon juice
  • 1 Tablespoon Coconut milk
  • ½ Teaspoon Lemon zest
  • ½ Teaspoon Vanilla extract
