For a while I was a raisin bran and granola kind of breakfast girl, then I was an anything egg kind of breakfast girl, then I was a granola bar or anything you didn’t need to cook because I had an 8 am class and woke up 15 minutes before I needed to be there kind of breakfast girl. So I’ve been through some breakfast phases. Going AIP meant I had to rethink some of my breakfast routines since eggs are a no go during the elimination phase. I needed an AIP fast and easy breakfast that filled me up. This AIP Breakfast pork recipe has been a recent go to in my breakfast routine to get me the protein I need to fuel my day.

Something the AIP diet taught me about breakfast is just how important it is to include protein in your breakfast and not just carbs. Since bacon can be expensive, and AIP approved sausage can be hard to find, I needed and AIP fast and easy breakfast meat that wasn’t filled with additives, didn’t break the bank, and actually tasted like breakfast.
This AIP breakfast pork was my solution. This pork takes about 12 minutes to make and is full of herby sweet flavor which makes it perfect for an AIP breakfast. This pairs great with the spinach and sweet potato hash or the sweet potato hash browns. You can make your pork the day of or prep it ahead of time. It has been the perfect Paleo & AIP protein to start the morning.
Tips and Tricks for Making this AIP Fast and Easy Breakfast
What cut of pork should I use in these AIP breakfast pork bites?
When I make my pork I usually use pork loin. Pork chops would be a great choice as well. Both of these cuts tend to do well with this recipe. If you don’t have those options, you could also use ground pork and season it the same for an AIP breakfast pork sausage rather than nuggets.
Can I use fresh herbs in this AIP fast and easy breakfast?
When it comes to breakfast I look for the path of least resistance, for me that means using dried herbs. This dish would taste great with fresh herbs as well. For a substitution of fresh herbs, use about 1 teaspoon of fresh chopped sage and 1 teaspoon of fresh rosemary.
Tips for meal prepping this AIP breakfast pork
Mornings can be chaotic, especially if you are trying to get out of the house for work or school. I like to meal prep my pork for busy mornings. Sometimes I will make this on the weekend and eat it throughout the week or make a big batch on Monday morning. It lasts for about 6 days in the refrigerator in an airtight container. One recipe makes four servings with about 28 grams of protein per serving.
Let's Make Some AIP Breakfast Pork!
Start by setting a 10 inch skillet on medium heat. This cast iron skillet from Lodge is my go to kitchen skillet.
Take your pound of pork and cut it into bite sized pieces. I really like to use a kitchen scissors for cutting meat because it make the process easy and keeps surfaces clean. This pair of kitchen scissors is similar to the ones I have and come apart for easy cleaning.
In the heated skillet add a generous glug of oil or bacon grease for extra flavor and spread around the skillet. Add the meat to the skillet and cook for 8-9 minutes.
While the pork is cooking, add in the seasonings and herbs to the pork. Stir the meat occasionally to avoid burning and to make sure that the pork is cooking evenly. As the pork cooks you may need to add more oil to avoid it sticking to the skillet.
At the 8 minute mark, check the pork by cutting in half. The pork should be nearly cooked through at this point. Finally add the honey and cook for another 2-3 minutes or until the pork looks nice and glazed.
Take the AIP breakfast pork bites off the heat and serve immediately or store in an airtight container in the refrigerator for up to 6 days. This makes 4 servings.
