When I went on an anti-inflammatory diet it really cramped my sandwich style. Not having easily accessible bread made sandwich eating feel like such a hassle. You have to make your own bread before you can make an AIP or Paleo sandwich. Ain’t nobody got time for that! But I really missed having a good sandwich. After I created a recipe for AIP sandwich rounds that were inexpensive, took minimal prep, and only 10 minutes of baking, I knew I was back in the sandwich making business. They make such an easy AIP diet lunch or dinner. With the hot summer weather I was wanting something fresh and satisfying, and that birthed the Chicken BLA, or bacon, lettuce, and avocado sandwich.
This Chicken BLA is a tasty take on the classic BLT, just with a little chicken and a lot less tomato. It has fresh crisp lettuce, creamy avocado mayo, crispy bacon, and flavorful honey glazed chicken all pressed between AIP sandwich rounds. It is the perfect combo for an AIP diet lunch or dinner during these warmer months like the Cilantro Lime Chicken bowl or Paleo Steak Salad! I love these sandwiches, because even if you don’t already have the AIP sandwich rounds on hand, you can make them in 25 minutes or less. Plus, they only take about 15 minutes of actual cook time which makes summer meals a lot less hot and they taste so stinkin’ good!
Tips and Tricks for making the perfect AIP & Paleo Sandwich!
What type of bacon should I use for this AIP diet lunch sandwich?
For AIP compliance and a healthier version, make sure to find a bacon that is nitrate free and sugar free. I like thinner slices bacon because it gives more of a crunch and is easier to bite into but thick sliced bacon works great for this recipe as well. You can also use turkey bacon if you prefer, just make sure to add enough oil when you cook it!
Tips on making the sandwich rounds
I like to make a big batch of sandwich rounds when I can and keep them in the freezer. Each recipe makes enough rounds to make 4 sandwiches. If you have them in the freezer pull out however many you need. Thaw them in a skillet on medium heat for about 4-5 minutes or until warm. If you don’t have them on hand, you can whip this AIP Sandwich Rounds really fast. Just throw everything in a blender or food processor and place the dough on a cookie sheet to bake for 10-12 minutes. Or use your favorite AIP of Paleo bread recipe.
What is the Avocado Mayo in this easy AIP diet lunch?
The avocado mayo is a dressing & sauce that is rich and creamy and made with an avocado base. It gives a nice sweet and tangy flavor to the AIP paleo sandwich, and I highly recommend making a batch if you don’t have any on hand. If you don’t have all the ingredients handy, you can skip the mayo and just add avocado to your sandwich.
Let’s Make This Easy AIP Diet Lunch and Dinner
If you don’t have AIP sandwich rounds or bread handy, start by making the AIP Sandwich Bread.
Next, take a skillet and set it to medium heat. Add your bacon to the skillet and cook for 5-6 minutes, flipping halfway through the process. I used my 12 Inch Lodge cast iron skillet and it was the perfect size!
While the bacon is cooking, take out your lettuce and wash it and set it aside.
When the bacon is finished, remove it from the skillet. Next take the chicken and cut it into two pieces about 4 oz each. Add the chicken In the same skillet that the bacon was in and season the chicken on both sides. Leave it cooking for about 4-5 minutes then flip to the other side.
At about 8 minutes, check the chicken by slicing the thickest part. If the juice runs clear it is done, if not let it cook for another 1-2 minutes. When the chicken is nearly done, add the honey to the chicken and let it cook for about another minute. When the chicken is done, remove it from the skillet and transfer to a cutting board.
If you don’t have any avocado mayo on hand, make some while the chicken is cooking. Put all the ingredients into a blender or food processor and blend until smooth.
AIP & Paleo Sandwich Assembly
Assemble the sandwich by starting with the avocado mayo, add your desired amount of lettuce 2-3 pieces, and three slices of bacon.
Finally, take your chicken and slice it longways so that it fits better in your sandwich. Spread the other AIP bread round with avocado mayo and place on top. Serve immediately or stick in your lunch box for later. You can also save the ingredients separately and they will stay good in an airtight container in the refrigerator for up to 5 days
